Is there a way to send someone an email without them knowing who sent it and from what IP address?

I am looking to send a best friend a message for her 40th birthday and since she is very computer savvy, I know she will attempt to find out the IP address and then I will be busted. Help!!! After all you only turn 40 once!!!
